Profile
The coffee has flavours of heavy fruits, chocolate and spices. There is also a distinct aroma of orange on the nose. It is very balanced and gives a round mouthfeel..

Preparation Methods
Colombia Maragogype is a fruity and spicy coffee. We recommend drinking it single-origin.
The coffee is perfect as a cappuccino, filter coffee and in the French Press. Also excellent in the Bialetti espresso maker.
Origin
Patricia Builes’s family has run the farm La Hacienda Villa Clemencia for more than 45 years and the knowledge of coffee production has been passed down from generation to generation. The estate is located in Risaralda in the west of Colombia at an altitude of 1650 meters above sea level. The soil is volcanic and loamy, and therefore very nutritious.
The entire production has been converted to organic in recent years. As a result, both the yield and the quality of the coffee has increased, and at the same time the ecosystem has recovered. The farm has also created space for endangered species such as the Colombian walnut (Cedro Negro), which affects the farm's water supply and creates an optimal environment for both coffee planting and biodiversity. For the coffee, the family receives more than twice the fair-trade price.
Roasting Recommendation for Maragogype
The coffee can be roasted from light (City) to darker (Full City). In light roasts, the complexity and fruity notes of this coffee come through beautifully.
Due to the size of the beans, a little more heat can be applied than with smaller Arabicas.

Great for third wave/acidity enjoyers
Just follow the Aillio bullet third wave roast profile for this.
When it comes to brewing in the Chemex, I do 15g to 250 ml of water as it is a quite high in acidity bean, but by brewing like this I was able to achieve a ripped dry grape with a hint of pineapple smell. Little round pleasant aftertaste dryness.
