The roast level describes how strongly a coffee bean has been roasted and how this process affects its color, aromas, and intensity. Every coffee roast is a sensitive process that shapes the final flavor profile in the cup. Understanding roast levels allows you to intentionally guide the development of flavor and aroma, unlocking the full potential of each bean.

 

In a light roast, vibrant acidity and delicate fruity notes are preserved, giving your coffee a refreshing brightness. Caffeine hardly breaks down during roasting, so the caffeine content per bean remains largely constant. However, since coffee beans lose mass during roasting, darker roasts contain more beans by weight. So if you always measure out, for example, 18g of coffee for your portafilter, a darker roast will include significantly more beans than a lighter one. As a result, that cup of coffee will also contain more caffeine.

As the temperature rises, the sugars in the bean begin to caramelize, and the Maillard reaction releases a variety of aromas that define your coffee’s character. The first crack is the audible moment when the bean breaks open, developing a light roast with fresh, vibrant notes. When you reach the second crack, a darker profile emerges with a shiny surface and strong roasted aromas that emphasize the body and intensity of the coffee.

 

Typically, you’ll choose a roast level somewhere between the first and second crack. You’ll notice that the acidity is most pronounced at the beginning of the roast but decreases as roasting continues. At first, there’s hardly any bitterness, but it increases with darker roasts. Around halfway between the first and second crack, sweetness reaches its peak due to Maillard reactions producing natural sugars. Later, as caramelization intensifies, sweetness starts to fade again. Up to the second crack, the coffee becomes increasingly full-bodied; however, if you roast beyond the second crack, the mouthfeel suddenly collapses, and the coffee turns thin and unpleasantly bitter.

 

Different roasting durations change the balance, coffee strength, and acidity profile, making each roast a unique experience.
