9 Recipes for Cold Coffee

Cold Brew Coffee has captured our hearts by storm.
But what are the differences between Cold Brew, Cold Drip, and Iced Coffee?

The temperatures are rising and the body craves caffeine - time for an ice-cold coffee. There are plenty of ways to get a refreshing kick and almost all of them can be easily prepared at home. In principle, you can distinguish between cold brewed and iced drinks. Cold brew coffee is prepared with water at room temperature at most. Iced coffee is prepared conventionally and then quickly chilled. It is important to cool down iced drinks quickly to avoid a bitter taste.

Cold Brew Coffee

Cold Brew differs significantly in terms of extraction from regular coffee. The water is not heated, so the extraction takes much longer - at least 10 hours compared to about 4 minutes for a hot brewed coffee. But why go to the effort? Cold Brew tastes very mild, smooth, and has hardly any bitter taste. Although the coffee extracts about 90% of the flavour elements, it only extracts about 15% of the oils and acids in the coffee.


Cold Brew Recipe

The preparation is very simple - you just need to prepare it in advance as it takes a long time to steep. Below you will find our favourite recipe as well as bean recommendations. You can experiment with Cold Brew by adjusting the coffee and water quantity, grind size, and steeping time:

  • Approx. 100 grams of coffee per 1 litre of water
  • Coarse grind
  • Fill together in a bottle and seal
  • Leave the coffee at room temperature and wait for at least 12 hours. Shake carefully occasionally.
  • After 12 hours, the taste and acidity are very pronounced.
  • After 24 hours, the coffee is significantly stronger, and the characteristic flavour notes and acidity are overshadowed. However, the coffee now has a pronounced body.
  • Filter (e.g. through a regular filter for drip coffee) and fill into a sealable glass
  • The coffee is now strongly concentrated, so you can store it in the refrigerator for a long time. You can drink the Cold Brew either pure, on ice, with water, with milk (image at the top) or with homemade almond milk.

Roasting for Cold Brew

Roasting for Cold Brew Cold Brew must be refreshing, therefore a fruity coffee is recommended. Coffee for Cold Brew should also be lightly roasted, ideally close to the Sweet Spot where you have the most sweetness in the coffee. As a rule of thumb, it is recommended to go about 1:15 minutes past the First Crack with the roasting.

Cold Drip Coffee

Cold Drip is Cold Brew 2.0. The coffee is also prepared with cold water, but a bit more elaborate than Cold Brew. A container is filled with water, ice, or a water-ice mixture, and the water drips from the bottom of the container into a coffee filter. The result is a coffee that brings out the flavor notes even more strongly. Cold Drip Coffee originated about 400 years ago. The Dutch, on their travels through the colonies, often had no electricity but did not want to forgo their coffee. Therefore, they invented Cold Drip Coffee, which can be stored and taken along for days thereafter.

For the preparation, you need an installation that drips the coffee evenly over the coffee powder for a longer period of time. Various providers offer beautiful drippers for this purpose.

Here too, I recommend a fruity coffee that you should definitely roast quite light.

Hot-Bloomed Cold Brew

The preparation remains essentially the same, except that you initially bloom the coffee with hot water. This will give you an even more consistent extraction of the volatile compounds in the coffee. Specifically: the wonderful taste found in your high-quality single origin coffees.

Here we also recommend fruity green coffees, roasted rather lightly.

Hyper refreshing! Cold Brew is prepared, placed in a keg, and infused with nitrogen (Nitro). This can be easily connected to a tap and provides a cool, fresh, delicious coffee. It looks like a Guinness being poured. Just that alone is so spectacular that you shouldn't miss it.

Iced Latte

An absolute favourite on hot summer days. Easy to prepare, quick, and very delicious.

Roasting for Iced Latte

The coffee must stand up to a lot of milk. Optionally, you can also add some sugar over the coffee. Therefore, the coffee should have a nutty or chocolaty flavour and be roasted quite dark (well into or beyond the Second Crack).

Iced Americano

A calorie-free version of Iced Coffee. And the Iced Americano is also quickly prepared, so it can immediately take effect when you need your coffee.

Roasting for Iced Americano

Unlike Iced Latte, the espresso shot does not have to compete with the milk. You should prepare the espresso as you would drink it otherwise. I usually roast the coffee for espresso to Full City, or until the beginning of the Second Crack.

Sparkling Espresso

Something of the best on really hot days! It is prepared almost the same way as the Iced Americano, but with sparkling water.

  • Carefully pour sparkling water on top

A thick layer of foam forms on top, making the coffee look like Nitro Cold Brew. Therefore, be sure to use a delicious coffee for the shot, as the taste really comes through in the foam.

Roasting for Espresso Frizzante

The same applies here as for the Iced Americano. You should definitely try out different coffees. Both coffees where the roasting flavour comes through strongly and coffees with a pronounced acidity. I like both very much with the Frizzante.

Japanese Iced Coffee

In the Japanese Iced Coffee variant, you brew the coffee as usual - with the difference that you have already placed ice cubes in the pot, which immediately cool the coffee. This avoids a bitter aftertaste when enjoying the coffee later. Brewing with hot water over ice cubes allows the coffee to retain its typical coffee taste. The most beautiful preparation is of course in the Chemex, but you can prepare the coffee in any pot.

  • Add 300g of ice cubes to a Chemex for 6 cups
  • Place filter on the Chemex and add 38g of coffee ground to a medium coarseness to the filter
  • Slightly bloom the coffee grounds and gently pour a total of 300ml of water at 92°C over the coffee

Roasting for Japanese Iced Coffee

For this, you should use a coffee with a pronounced floral or fruity note. Roast the coffee lighter (unless you mix it with milk afterwards), for about 1:15 minutes past First Crack.

Affogato al caffè

I love it on warm summer evenings in the garden restaurant as a conclusion to a fine Italian meal. The preparation couldn't be easier. Of course, you can experiment with different ice cream flavours and different espresso variations.

Roasting for Affogato al caffè

The coffee can be very dark with pronounced roasting aromas. Here, a classic espresso blend is recommended (approx. 30% Robusta). Roast beyond the Second Crack until the beans shine slightly, then let the finished coffee stand in a sealed bag for about 7 days.
