Puebla is the fourth largest coffee growing region in Mexico and has a long tradition of cultivating high-quality and organically grown coffees. The coffee is largely grown by small farms at an altitude of 900 to 1,000 meters above sea level.

Mountain Water Process

Decaffeinated coffee is often consumed by pregnant or breastfeeding mothers. Therefore, we have decided to add a coffee to our range that has been organically produced and decaffeinated without the addition of chemicals using the Mountain Water process.

Another advantage of this decaffeination method is that the coffee taste is best preserved compared to other methods, resulting in a high-quality coffee taste. How Mountain Water decaffeination works: The green coffee beans are immersed in pure glacier meltwater from Pico de Orizaba in Mexico (the highest volcano in North America). Caffeine and oils are dissolved. Subsequently, the caffeine is filtered out of the water and only the water-soluble oils are reintroduced to the coffee. The result: Decaffeinated coffee.

Ingo's Roasting Recommendation & Roast Profiles

I recommend a medium or slightly darker roast - more medium if the coffee is roasted for filter or French press; darker if the coffee is roasted for Bialetti, fully automatic machine, or portafilter. Decaffeinated green coffees are darker than conventional green coffees. This also continues through the roasting process, so the roasted coffees will be slightly darker at the same roast level as conventional coffees. To avoid scorching, you should choose a slightly lower preheating temperature for decafs and also add less heat during the drying phase of the roast than usual. When the first crack occurs, you need to listen carefully as it will crack more quietly. When the first crack happens, you should reduce the temperature more than usual - the RoR after the first crack should not exceed 12°C / minute. Of course, you should not reduce the temperature too much here to avoid baking, so aim for about 20% (for medium roasts) or 25% (for darker roasts) development time.

Ingo's Roasting Recommendation & Roast Profiles

I recommend a medium to slightly darker roast - more towards medium if the coffee is roasted for filter or French Press; darker if the coffee is roasted for Bialetti, fully automatic machine, or portafilter. Decaffeinated green coffees are darker than conventional green coffees. This also continues through the roasting process, therefore the roasted coffees will be slightly darker at the same roast level as conventional coffees.
