Quality control through measurement of water activity

When it comes to the quality of coffee, water activity plays an important role. Water activity (= aw; simplified as the presence of water in green coffee) is measured by determining the water vapor pressure in a substance (= green coffee) and comparing it with the vapor pressure of pure water at the same temperature.

In coffee, water activity affects taste, aroma, and health. Excessive water in green coffee promotes the formation of bacteria, yeasts, and moulds - none of which you want in your cup.

In order to ensure quality, the SCA has defined that the water activity of specialty coffee must not exceed 0.70 aw.

The Lighttells AW-600 water activity meter measures water activity reliably and precisely. There are 2 types of measurements: Quick measurement (duration: approx. 6 minutes) and detailed measurement (duration: approx. 12 - 60 minutes). The handy device is very robust and easy to use.
