This YouRoast set consists of three exclusive Geisha green coffees from the renowned coffee producer Jamison Savage from the Finca Deborah farm in Panama.
In 2024, Jamison and Finca Deborah achieved their greatest success to date: their coffees took first, second and third place at the World Barista Championship - proof of the exceptional quality of the coffee.

Green coffee Finca Deborah "Ellipse": Geisha, Whole cherry Anaerobic Nitrogen Macerated Washed
After harvesting, the whole coffee cherries are placed in closed containers filled with nitrogen. The nitrogen completely replaces the oxygen. The first fermentation process takes place for around 50 hours, with constant and careful monitoring of the temperature and pH value.
The coffee is then washed, whereby the skin and pulp are completely removed. The washed coffee is then placed on the second level of a three-stage drying bed developed by Jamison Savage. When the coffee has reached a residual moisture content of 11% after approx. 12 days, it is packed in bags and stored at a cool, stable temperature for several weeks. During this resting period, the moisture content of the coffee beans can equalise and the flavour development is completed.

The Natural anaerobic nitrogen maceration process is a real innovation that produces unique, syrupy flavours.
The perfectly ripe Geisha cherries are stored in hermetically sealed tanks at cool ambient temperatures for over 100 hours. Nitrogen is blown in at regular intervals to remove any residual oxygen. The temperature and pH value are closely monitored. The cherries are then slowly dried in a three-stage, uniform drying system for up to 30 days, which brings out the unique flavours even better.

Green coffee Finca Deborah "Terroir": Geisha, Classic Washed
The Classic Washed process is proof of the great craftsmanship in the country of cultivation. This coffee is a remarkable embodiment of its terroir and its unmistakable variety, which is further emphasised by human intervention during processing.
It all starts with a careful harvest, where only the ripest and most flawless cherries are picked by hand. These cherries are then carefully de-pulped and washed using state-of-the-art, water-saving machines. The coffee is then dried in the shade in an air-conditioned drying house, where the cherries are carefully stored on different levels in shaded beds. Constant checks ensure precise drying of the beans, which contributes to the distinctive and fine characteristics of Classic Washed coffee.
Finca Deborah
Finca Deborah in Volcàn, Panama, is one of the most famous, highest and most remote geisha farms in the world. Most of the time it is shrouded in the clouds of the rainforest, and the volcanic, nutrient-rich soils provide ideal conditions for coffee cultivation at extreme altitudes.
At an impressive altitude of 1'900 metres above sea level and at lower temperatures, the metabolism of the coffee plants slows down, allowing them to channel more sugar into the coffee cherries. Finca Deborah also benefits from an optimal rainfall of 2200 mm per year on average. These exceptional conditions create the perfect environment for growing the complex Geisha coffee variety.
Neither pesticides nor herbicides are used on the Jamison farms. The high altitude of Finca Deborah and the special microclimate minimise many harmful diseases, so that the coffee trees can invest their energy in producing high-quality fruit instead of fending off pests or diseases. These two decisive factors contribute significantly to the intensely sweet and extremely complex cup profile of Finca Deborah coffees.
