The coffee comes from the Santa Mónica farm, grown by Jairo Arcila, an experienced smallholder farmer known for meticulous cultivation practices and innovative fermentation techniques. The coffee is marketed through Cofinet, a family-owned specialty coffee company rooted in a long-standing tradition of coffee production and trade. Today, Cofinet cultivates and processes specialty coffee and exports it worldwide. Brothers Carlos and Felipe Arcila, sons of Jairo, develop alternative fermentation processes there and maintain sustainable partnerships with producers.

This microlot consists of 100% Castillo variety, developed by the Federación Nacional de Cafeteros. Castillo is higher-yielding than Caturra and resistant to coffee leaf rust.

Processing involved a 48-hour dry anaerobic fermentation with peach infusion, followed by gentle washing and drying on raised beds at temperatures below 35°C.

This careful processing and the special fermentation method make this microlot an experimental specialty coffee with a clear origin, unique character, and vibrant aromatics. Ideal as filter coffee, cold brew, or espresso with milk.
