The coffee comes from smallholder farmers in the municipality of Inzá in the Tierradentro region in western Cauca. This region in Colombia is inhabited by the Indigenous Paez people (about 80%), whose deep connection to the land has shaped local agriculture and community life for generations.

The farms are very small, typically ranging between 0.5 and 1.5 hectares. This small-scale structure allows for highly careful cultivation and contributes to the coffee’s high quality and distinctive profile. At the same time, it supports a form of agriculture that preserves biodiversity and is based on a balanced coexistence with nature – the coffee often grows alongside native plants, helping maintain ecological balance.

We source this coffee through our partner Cofinet, which enables direct relationships with producers and ensures transparency and quality control throughout the entire supply chain.

Tierradentro is a region of great historical and ecological significance. The traditional knowledge of Indigenous communities, combined with more modern cultivation methods, shapes local agricultural practices and is reflected in the quality and authenticity of the coffee.

The coffee is grown at high altitudes between 1,700 and 2,000 m a.s.l., where cooler temperatures allow for slower cherry maturation, contributing to the development of complex aromas. The main cultivated varieties are Castillo and Caturra, which are well adapted to the local conditions.

Overall, this results in a coffee strongly defined by its origin – through the landscape, the smallholder farming structure, and the knowledge passed down through generations of local communities.

In filter brewing – especially with V60 or AeroPress – the vibrant freshness of green apple and Granny Smith and the clear citrus structure come through particularly well. The lemon acidity is bright and well-defined, while the caramel sweetness remains subtle in the background, gently rounding out the cup.

As espresso, the coffee develops more depth and sweetness: green apple shifts towards red apple, the citrus notes move in the direction of orange, and additional toffee and milk chocolate aromas emerge that are less dominant in filter preparation.

In milk-based drinks such as flat white or cappuccino, these sweeter, rounder notes are further enhanced, resulting in a very harmonious and easily approachable coffee for a wide range of tastes.
