The family of Patricia Builes has been running the farm La Hacienda Villa Clemencia for more than 45 years, and the knowledge about coffee production has been passed down from generation to generation. The estate is located in Risaralda in the west of Colombia at an altitude of 1,650 meters above sea level. The soil is volcanic and clayey, and therefore very nutrient-rich. The entire production has been converted to biologically organic in recent years.

This has led to an increase in both yield and coffee quality, while simultaneously restoring the ecosystem. Space has also been created on the farm for endangered species such as the Colombian walnut / Cedro Negro, which influence the water supply to the farm and create an optimal environment for both the coffee plants and biodiversity. The family receives more than double the Fairtrade price for the coffee.

Colombia Maragogype is a fruity and spicy coffee. We recommend enjoying it single-origin. This coffee is perfect as a cappuccino, filter coffee, and in the French Press. Also excellent in the Bialetti Moka Pot.

The coffee can be roasted from light (City) to darker (Full City). In lighter roast levels, the complexity and fruity notes of this coffee come out beautifully. Due to the size of the beans, a little more heat can be applied compared to smaller Arabicas.

Very nice coffee, with complex

Very nice coffee, with complexity and fruitiness. Roasted it for espresso and v60. Great in both.

Great for third wave/acidity enjoyers

Just follow the Aillio bullet third wave roast profile for this. When it comes to brewing in the Chemex, I do 15g to 250 ml of water as it is a quite high in acidity bean, but by brewing like this I was able to achieve a ripped dry grape with a hint of pineapple smell. Little round pleasant aftertaste dryness.
