What wet processing means in coffee
In washed processing, the fruit mucilage, technically known as mucilage, is removed from the bean using water before it is dried. In English, you will hear the term Wet Processing, which describes exactly the same method.
What remains after this step is the coffee seed, covered by the parchment layer and completely free of any adhering fruit pulp. This early intervention has a decisive influence on the final cup profile, because the fruit has virtually no impact on the drying process and therefore does not carry over into the flavor of the bean.
To truly understand this process, it is worth taking a brief look at the structure of the coffee cherry. On the outside is the thin skin, the exocarp. Beneath that is the fruit pulp, known as the pulp. Directly around the bean sits the slippery mucilage, followed by the parchment layer and, in the very center, the fine silverskin. Compared to natural or honey processing, wet processing gives producers significantly more control over the process, resulting in cleaner, more uniform coffees with more predictable outcomes from batch to batch.
Difference between Natural and Honey processing
In “Natural processing,” the entire coffee cherry dries in the sun with the fruit pulp intact until the bean can be removed from the dried husk. In Honey processing, a portion of the mucilage is intentionally left on the bean so it can continue to influence the drying process. Washed processing, by contrast, removes this layer early and consistently before drying begins.
This results in clearly different effects. Naturals typically deliver more body, more sweetness, and a pronounced fruity character. Honey coffees sit in between, often with a silky texture and rounded sweetness. Washed coffees highlight structured acidity and clarity because the fruit influence is removed. The three methods therefore pursue different sensory goals, and none is inherently better. What matters is what you want to achieve in the cup.
This is how the wet processing method works
The washed coffee process is divided into three clearly distinct phases.

1. Pulping

2. Fermentation
In the next step, the depulped beans rest in water-filled tanks. Typical fermentation times range between 12 and 48 hours, depending on temperature, water volume, and the desired profile. During this phase, naturally occurring microbes biologically break down the mucilage so that it can later be easily washed off.

Producers who work very carefully in this stage develop their own distinctive sensory signature. 3. Washing and drying
Once fermentation is complete, the beans are thoroughly rinsed until no mucilage remains attached to the parchment layer. Only then does the actual drying begin, either on raised drying beds, the so-called African Beds, or on concrete or stone patios.

The goal is a final moisture content of 10 to 12 percent before storage. Depending on weather, altitude, and climate, this can take one to four weeks.
During this time, the beans are regularly turned to ensure even drying and to prevent mold or faulty fermentation.
