Opinions differ on how long raw coffee can be stored. Some say 3 to 5 years, or even believe that coffee gets better with time. Others think that the essential oils and many flavour notes diminish over time.
In any case, raw coffee can be stored for several months without any issues. The coffee should be stored preferably in a dark place, between 5 and 20 degrees at a constant temperature, neither too humid nor too dry. If you store the coffee openly or in a bag or container that is not airtight, it is important to ensure sufficient air circulation and to avoid storing the coffee next to foods or other items with strong odours, as the coffee can absorb the smell.
Storing roasted coffee properly
After our experience, the roasted coffee tastes best 3 to 10 days after roasting. After that, it becomes flat. You should store the roasted coffee in a dark, airtight container or bag - preferably with an aroma protection valve. Only grind as much coffee as you need in your grinder or fully automatic machine. Drink ground coffee within 30 minutes of grinding. So if you want to enjoy coffee with all its nuances, flavour notes, and aromas, you should either buy it from a small roastery that tells you where it comes from, what's in it, and when it was roasted - or: roast it yourself!
