At the end of a valley, near the border with Ecuador, the coffee for El Eden is grown. Unlike the typical washed coffees of the region, El Eden is fermented in closed bags before pulping – a process that gives the coffee a complex aroma profile.

After harvest, the cherries are sorted in water and undergo a first fermentation in the bags for 24 to 36 hours. After pulping, a second fermentation follows in tanks for another 24 to 36 hours. Then the beans are washed and dried to a moisture content of 9 to 11%.

El Eden comes from a rotating group of smallholder farmers from the Cajamarca region, Peru, who are supported by Origin Coffee Lab.

The producers are organized into committees and receive training as well as access to financing and markets. Through direct trade, they receive fair prices that provide financial security and enable sustainable development.

In recent years, coffees from this region have developed significantly and now reach an impressive level of quality.

Fair and reliable payment above the local market price creates the foundation for stability and growth — and promotes coffees with a unique character.
