The coffee grows in the region Lintong Nihuta in Sumatra, Indonesia. Lintong Nihuta is located at the southwestern tip of Lake Toba high on a plateau and has extremely fertile soils due to a supervolcanic eruption approximately 70,000 years ago. The coffee comes from the Naibaho Cooperative and grows at an altitude of 1,400 - 1,700 meters above sea level. For high coffee quality, the coffee farmers harvest three times and only pick the ripest cherries each time. The coffee cherries are then processed using the Giling Basah method; a method that is widely used in Indonesia.

The seeds are depulped and only briefly dried until the moisture content is about 50% (instead of the usual 10-12%). At this point, the seeds are already freed from the parchment skin and further dried - a difference to most other methods where the parchment skin is only removed shortly before the fully dried coffee is shipped. Thanks to Giling Basah, the beans have a striking bluish jade colour and the coffee has a distinctive flavour profile with pronounced sweetness and more body. Naibaho dries the coffee on large covered terraces, the coffee is regularly raked and protected from precipitation, leading to a surprisingly clear cup profile.

Preparation Recommendation

Depending on the roast level, different preparation methods are recommended. Darker roasted, Sumatra Lintong is ideal for Café Crème or French Press. Lighter roasted, we recommend it for Filter Coffee or the Aeropress. Additionally, the coffee blends very well in an Espresso blend.

This coffee can be roasted both light and dark. In a darker roast (e.g. Full City+), the heavy notes of spices, dark chocolate, and sometimes almost earthy notes typical for Sumatra come to the fore. In a lighter roast (e.g. City), the sweet notes of passion fruit and citrus notes of grapefruit take centre stage. To accentuate the sweetness, you should extend the drying phase and give it more time after the first crack.
